Usually 58.11.00 when you publish and commercially exploit your own titles as a publisher, including e-books and audiobooks: the code explicitly includes the activity of writers who self-publish their own content. If you create non-video content that does not constitute a proper book, 58.19.00 may come into play.
I do editing and proofreading for other publishers — does that fall under 58.11.00?
No. 58.11.00 is publishing, meaning issuing books you own or have acquired. Editing and proofreading on commission are services rendered to the publisher, not publishing: the comparison is with other publishing activities and related services, for example 58.19.00.
I publish dictionaries, atlases, and maps — is that still 58.11.00?
Yes. The code covers books, booklets, dictionaries, encyclopaedias, atlases, maps, and geographical charts, as well as comics and graphic novels. E-book and audiobook editions of those works are also included within 58.11.00.
